🍗 Chettinad Chicken Curry

Ingredients:
- Chicken – ½ kg (washed and cut)
- Onions – 2 (finely chopped)
- Tomatoes – 2 (chopped)
- Ginger–Garlic Paste – 1 tbsp
- Curry Leaves – few sprigs
- Oil – 3 tbsp
- Salt – as required
🌶️ Spice Mix (Chettinad Masala):
- Black Peppercorns – 1 tsp
- Cumin Seeds – 1 tsp
- Fennel Seeds – 1 tsp
- Coriander Seeds – 2 tsp
- Dry Red Chilies – 4–5
- Cinnamon Stick – 1 small piece
- Cloves – 3
- Cardamom – 2
- Poppy Seeds – 1 tsp
- Fresh Grated Coconut – 2 tbsp
👉 Lightly roast these ingredients, allow to cool, and grind into a fine masala powder.
Preparation Method:
- Heat oil in a pan, sauté onions until they turn light golden.
- Add ginger–garlic paste and cook until fragrant.
- Add chopped tomatoes, stir until soft and mushy.
- Add the chicken chunks and sauté gently until they start absorbing the spices.
- Sprinkle the freshly ground Chettinad masala and salt, combine well.
- Pour in water (as needed) and let the curry simmer until the chicken is cooked and tender.
- Garnish with curry leaves before serving.
