Chettinad Chicken Curry

Ingredients:

🌶️ Spice Mix (Chettinad Masala):

👉 Lightly roast these ingredients, allow to cool, and grind into a fine masala powder.

Preparation Method:

  1. Heat oil in a pan, sauté onions until they turn light golden.
  2. Add ginger–garlic paste and cook until fragrant.
  3. Add chopped tomatoes, stir until soft and mushy.
  4. Add the chicken chunks and sauté gently until they start absorbing the spices.
  5. Sprinkle the freshly ground Chettinad masala and salt, combine well.
  6. Pour in water (as needed) and let the curry simmer until the chicken is cooked and tender.
  7. Garnish with curry leaves before serving.
